Mexican food recipe

I've posted some recipes in the past and it I received some really great feedback, so I thought I'd do it again.

Here is a recipe that I use often. It's pretty simple and it's very filling.
I call it carne con papas or meat and potatoes. Some people call it guisado ( gee-sah-dough), but one thing you can certainly call it is delicious!

Ok so first I purchase a thin cut beef, I get any thin cut beef that is inexpensive. It's going to stew for a while so a fancy cut is not needed. I do encourage thin cuts though since it will cook faster.

I cut it up into small pieces about bite sizes but, again, I don't work hard at this so I just cut it up in somewhat uniform sizes. Then I peel potatoes and cut them into cubes about the size of the beef cubes, this will help the dish cook evenly.

I also cut up one whole tomatoe and half an onion and chop them up small about 1 inch or so. I don't work hard at this either. I just chop and drop (drop them into the pan.) brown the meat while you are chopping the veggies.

Once the meat is browned I drop in the potatoes, tomatoes, onions and about 2 cups of water, and I let it simmer for about 20 minutes or when the potatoes are fork tender. Make sure you add about a teaspoon or two of salt or as little or much as you like, while its cooking.

Once the potatoes are tender your meal is ready to serve. I usually serve it with flour tortillas or tortilla chips.
